I鈥檝e been vegetarian now for 13 weeks, yay! It has been fairly pain free to me and we鈥檝e easily made chances in our house to make sure we鈥檙e not missing anything from cutting our animal intake. Sweet potato pancakes

Weekends are the only time I get to play around and experiment with food. I usually follow my early morning gym sessions with sweet potato and eggs. Today was a pancake version made with my new bear shaped frying pan. Juice Pulp Pizza Crust

Ingredients: 2 cups juice pulp 1 egg 2 teaspoons coconut flour herbs and spices to taste (I used chili and Italian herbs) Method: Place juice pulp into a blender, and combine well. You want most of the chunks either removed, or ground down. The mixture you be fairly smooth. Add the egg to the blended pulp and mix Turn mixture out into a bowl. Protein Fruit & Vege Pulp Bread

Ingredients: 2 cups fruit/vegetables pulp 2 scoops protein powder ( I used egg white powder) 2 eggs 1.5 tablespoons coconut flour 1 teaspoon baking powder salt to taste Method : Preheat oven to around 180潞C. Prepare a bread loaf tray. In a blender, blend the pulp to make it as smooth as possible. You may need to remove any skins or seeds from the pulp. Blueberry Jam Chocolate Hearts (sugar, dairy free)

Ingredients: 2 tablespoon coconut oil 1 tablespoon cocoa powder 1 tablespoon Greek yogurt (I used 1%) 1 teaspoon sugar free blueberry jam Method: Melt coconut oil. Add cocoa powder. Fill the bottom of a heart shaped chocolate mold. Place in freezer to set for around 5 minutes. Mix the Greek yogurt with the jam. Remove mold from freezer and top each chocolate base with the yogurt mixture. Return molds to the freezer to set. This should take an hour or two. Once set, remove the chocolates from the molds.
